Summary:Rescue efforts of the culinary traditions of the Kaméntsás community that lives primarly in the Sibundoy Valley (Putumayo Department) in the south of Colombia. Their culinary history revolves around "Shinjiak" (fire), as a key element because it provides heat, light and protection. Although traditional or vernacular cuisine is a tourist resource that can enhance the real situation of the community, the Camsa people suffer from the disease of "Whitening", that is, the tendency to be equal to the white [man], forgetting the knowledge sown for a long time by the ancestors who practiced an identity and sense of belonging. Of the 100% of the population only 5% retain their ethnic identity and it can be said that they are over 75 years of age.ʺ (HKB Translation) --Page 109.
